Today, territories are competing on several levels. To differentiate themselves, they can use different levers. Gastronomy is one of the pillars of French cultural history, and more specifically the restaurant sector. Restaurants are an integral part of the territory.
At the same time, the advent of sustainable development is affecting almost all commercial activities in France, and catering is no exception. The term "sustainable catering" is now being used, and restaurants are increasingly adopting behaviors that enable them to be designated as sustainable restaurants.
The aim of this thesis is to analyze the situation of sustainable catering in France and to understand what is at stake. The aim is to understand how sustainable restaurants represent a lever of attractiveness for territories.
Drawing on a qualitative research methodology and the literature, the thesis aims to propose an approach to promoting and developing sustainable catering, by formulating recommendations. These recommendations include best practices to be established and actions to be implemented.
